2008 RFA Technical Web Conference:
The Food Safety Side of Hot Processing

Overview:
Learn why hot processing works for you. Dr. Glass will describe
the micro side of hot processing, why it works, what are its limitations,
what to control, what to avoid, and what regulatory aspects to consider. Join
the group as together we learn the reasons why hot processing is a procedure
of choice for many of our food products and what factors to consider
to ensure food safety.
Presenter:
Kathleen Glass, Ph.D., Food Research Institute,
University of Wisconsin-Madison
Kathy Glass is a food safety researcher at the University
of Wisconsin-Madison and is acting associate director at the Food Research Institute.
She assists the food industry and regulatory agencies in assessing and developing
formulation-safe foods. Her research interests include the safety of low
acid refrigerated foods, process cheese and other dairy foods, and ready-to-eat
meats, focusing primarily on the control of Clostridium botulinum, Listeria
monocytogenes, and Staphylococcus aureus.
Dr. Glass earned her Doctorate in Food Microbiology
and Safety at the University of Wisconsin-Madison. She was 2004-2005 President
of the International Association for Food Protection and is a Past-President
of its Wisconsin affiliate. She has also been an invited speaker at numerous
workshops on food microbiology, process cheese and process meat safety, dairy
HACCP, and Listeria control methods.
How does the web conference work?
It's easy and convenient! A virtual seminar is one that you can "attend"
and participate in right from your offices. The savings are significant
- no travel time or hassle and no travel expense.
The RFA Web Conference will include live audio along with a slide
presentation on the Web. You just need a phone connection for the audio
and an Internet connection. In addition, the web conference will allow
you to comment and ask questions at specified times during the event
using your phone.
You can invite staff members to listen and participate too - all for
one connection fee! To get the most out of a web conference, it is
recommended that you have no more than five people at any one computer
connection. Multi-locations please register for each location.

The cost for this event is as follows:
- RFA Members: $199 per computer/audio connection
- Non-Members: $299 per computer/audio connection

the RFA office by fax or mail with your payment. Checks must be
made payable to the Refrigerated Foods Association. Forms should
be received no later than September 22, 2008.
Once your registration form and payment have been received by
the RFA, you will receive an email invitation to attend the conference
with information on how to attend.
